ABOUT PIE BIRD

Pie Bird is the creation of a social worker (Jamie) who was looking for a way to unwind after a long (yet rewarding) day of working with kids.  This tasty gig transpired as Jamie found herself reading cookbooks instead of bestselling novels and daydreaming about fillings for crusty, buttery pies. Baking made her happy and she learned that sharing her pies with other people made them happy too. Thus, Pie Bird was born. 

At Pie Bird, we focus on using high quality ingredients (you know exactly what's in your pie, no scary unpronounceable stuff here), local goods, and seasonal, organically-grown produce. Everything is handmade, from our all-butter pastry crust to our sea-salty peanut butter caramel. While Pie Bird has a menu available, we welcome custom orders and the chance to re-create for you a bite of nostalgia or that sought-after dessert for your special event.


Thanks to the Colorado Cottage Foods Act, we are able to bake the pies we sell out of our very own home kitchen. That means your pie is being created in a place of comfort and inspiration, which we hope shows through in every bite you take. It's a beautiful thing!


WHAT IS A 'PIE BIRD', ANYWAY?

Well, a pie bird is traditionally a ceramic bird used to ventilate steam out of a pie during the baking process. This allows the sweet or savory filling to cook beautifully and the flaky crust to remain intact. At Pie Bird, we love the history and simplicity of this classic device. Jamie used a pie bird in the first from-scratch pie she ever made. In fact, the little guy still sits in her kitchen today...
